Fall into Autumn Produce!
Fall is just around the corner, and the best of the season’s produce is ripe for your enjoyment! Eating fruits and veggies in this next season means you get the best flavor, best nutrient boost, and best price. Plus, seasonal produce can help get you out of a cooking or eating rut.
Here’s just a small sampling of what fall has to offer: apples, beets, cauliflower, figs, green beans, kale, mushrooms, parsnips, persimmons, radishes, and winter squash. Yum!
Here are some quick, delicious and healthy ideas for cooking with autumn produce:
- Salad: Add thinly sliced radishes and grated beets to your salad.
- Soup: Pumpkin and winter squash make a great base. Cook peeled chunks in broth, puree, and season with a hint of spices like cinnamon or nutmeg.
- Roasted veggies: Chop up a bunch of hearty veggies (like cauliflower, sweet potatoes, carrots and parsnips), toss them in olive oil, and bake until tender inside and slightly crispy outside. Season with salt, pepper, and herbs.
- Dessert: Baked apples and poached pears are some of the easiest and most delicious ways to savor the season. Serve with a dollop of yogurt jazzed up with a hint of maple syrup.
