Memorial Day Recipe: Watermelon and Feta Salad

Watermelon and Feta Salad
This refreshing side dish is a perfect accompaniment to a barbeque or can be made the main meal by adding in some shredded chicken or grilled shrimp.
Half of a seedless watermelon, diced into cubes
½ cup of feta cheese, in crumbles
¼ cup chopped fresh mint
1 Tablespoon balsamic vinegar
Mix all ingredients in large bowl and serve immediately. Adjust balsamic vinegar to taste.
